Honey is a natural sweetener.

1

Prepare sugar syrup by combining 1 cup sugar and 1 cup water in a pot.

2

Add 3 crushed cardamoms, few saffron strands, and 1/2 teaspoon lemon juice to the pot.

3

Add a few drops of orange food color if desired.

4

Let the mixture come to a boil, then simmer on low heat for 8-10 minutes until it reaches half-string consistency.

5

In a mixing bowl, combine 1 cup sifted all-purpose flour, 1/4 teaspoon salt (optional), and 1 tablespoon ghee, rubbing it well to make it crispy.

6

Add 1/4 cup whisked sour curd (yogurt) and mix well.

7

Gradually add 1/2 cup water bit by bit to make a smooth batter.

8

Add 1 teaspoon baking powder to the batter.

9

Ensure the batter is neither too thick nor too thin; add more flour if it's too runny.

10

Transfer the batter to a squeeze bottle or piping bag.

11

Heat vegetable or sunflower oil in a deep pan, adding a few tablespoons of ghee for taste.

12

Fry the jalebis on medium heat in hot oil; ensure the oil is hot enough for crispiness.

13

Do not fry on high heat; turn the jalebis once they look firm.

14

Drain the excess oil once both sides are golden.

15

Heat the sugar syrup until lukewarm.

16

Dip the fried jalebis in the warm syrup for a few seconds.

17

Let the coated jalebis rest on a mesh to allow excess syrup to drain.
