Honey is a natural sweetener.

1

In a mixing bowl, add 1 cup of all-purpose flour, 4 tablespoons of yogurt, 2 tablespoons of corn flour, and 4 teaspoons of ghee.

2

Add a pinch of yellow food coloring and mix well.

3

Gradually add 1/2 cup of water while mixing in a circular direction for about 3 to 4 minutes.

4

Add 1/2 teaspoon of baking powder and mix well, then add 1 to 2 tablespoons of water to achieve a thick batter.

5

Strain the batter through a strainer to ensure it is smooth.

6

Pour the batter into a jalebi maker or a sauce dispenser, or use a zip-lock bag tied with a rubber band.

7

Let the batter rest for at least 20 minutes before frying.

8

In a wide pan, combine 3 cups of white sugar and 1 1/2 cups of water, and heat together.

9

Add 1/2 teaspoon of cardamom powder and a pinch of orange coloring to the sugar syrup.

10

Cook the sugar syrup for about 3 to 4 minutes until it becomes sticky and forms a half-string consistency when touched between thumb and index finger.

11

Add 2 teaspoons of lemon juice to the syrup to avoid crystallization and remove from heat.

12

Heat oil and 2 tablespoons of ghee in a pan over medium heat.

13

Using the dispenser, start at the center and swirl in a circular motion to form jalebi shapes, stopping when they rise to the top.

14

Flip the jalebis and cook until they are crisp and the oil stops bubbling, ensuring they do not turn brown.

15

Drain the jalebis and immediately add them to the warm sugar syrup, letting them soak for about 30 seconds to 1 minute on both sides.

16

Remove the jalebis from the syrup and place them on a plate, repeating the process with the remaining batter.
