1

Dissolve 1/2 teaspoon of yeast in 1 tablespoon of water.

2

In a mixing bowl, combine 1/2 cup of all-purpose flour, 1 teaspoon of gram flour, 1/2 teaspoon of sugar, and 1/2 teaspoon of oil.

3

Add lukewarm water little at a time to the flour mixture to avoid lumps, mixing until smooth.

4

Let the batter sit for about an hour in a warm place, such as the oven.

5

Prepare the syrup by boiling 1 cup of sugar, 1/2 cup of water, 1 tablespoon of lemon juice, a pinch of cardamom powder, and a pinch of saffron on medium-high heat, stirring occasionally until sugar dissolves.

6

After the syrup boils, turn off the heat and set aside.

7

Fill a ketchup bottle with the prepared batter.

8

Heat canola oil in a deep pan to a depth of 3-4 inches over medium-high heat.

9

Check if the oil is ready by dropping a small amount of batter into it; if it rises, the oil is ready.

10

Squeeze the batter into the hot oil in circular shapes, ensuring they are light brown on both sides, which takes about half a minute.

11

Remove the jalebis from the oil and immediately transfer them to the hot syrup, soaking them for a few seconds before turning them to ensure they absorb the syrup.
