Preheat your oven to 150° Centigrade.

Line a baking tray with parchment paper and set aside.

In a bowl, add oats (old-fashioned or quick oats).

Add the gingerbread spice mix and mix together.

Add cashew nuts, almonds, and Brazil nuts (cut in halves) and mix together again.

Add salted butter as the oil of choice and honey as the sweetener; mix together until well combined.

Pour the mixture into the lined baking tray and bake in the preheated oven for 20 minutes at 150° Centigrade.

After the first 10 minutes of baking, remove from the oven and mix to prevent burning, then put back into the oven for the remaining 10 minutes.

After 20 minutes, remove from the oven and allow to cool completely.

Once cooled, add cranberry raisins and Chia seeds; mix together until well combined.
