1.25 pounds frozen shrimp
lemon juice

1/3 cup milk

Put about 1.25 pounds of frozen shrimp in a bowl and add lemon juice, salt, and pepper.

Cook 2 slices of bacon on a baking sheet for the beans.

In a pan, add bacon grease and trinity (onion, bell pepper, celery) and sauté.

Smash garlic and add it to the pan with the trinity.

Add canned kidney beans and crushed tomatoes to the pan and let it cook.

Add chili powder and cilantro to the mixture.

In another pan, add cooking oil and sauté more onions and garlic.

Add crushed tomatoes and let them cook down for 30 minutes with a lid on.

Add half a can of coconut milk and more cilantro, then bring to a boil.

Pulse the mixture to thicken it up, then add the shrimp and let it simmer for 15-20 minutes.

In a bowl, mix 1.5 cups of tapioca flour, 1/3 cup of milk, 1 teaspoon of salt, and 1/2 cup of grated queso fresco to make a batter.

Grease a muffin tin and fill each cup halfway with the batter.

Bake in the oven at 400°F for 15-20 minutes until golden brown.
