Start with 2 eggs in a bowl.
Add 35 g of sugar, which is about 2 tablespoons.
Add 15 g of dry yeast to the mixture.
Pour in 200 ml of water, but reserve some (50 ml) to adjust as needed based on flour.
Add 50 ml of vegetable oil to the mixture.
Measure out 500 g of all-purpose flour and add it to the mixture.
Add 5 g of salt to the flour mixture.
Mix the ingredients together, checking the texture of the dough.
Knead the dough for 3 to 4 minutes until smooth.
Place the dough in a plastic bag and let it rest for 40 minutes.
While the dough rests, prepare the pastry cream by mixing 200 g of sugar with 5 strained egg yolks and a pinch of salt.
Add a cap of vanilla extract to the mixture.
Pour in 500 ml of milk, adding a little first to dissolve the sugar.
Add 80 g of cornstarch to the mixture and stir to avoid lumps.
Transfer the mixture to a saucepan and cook over medium heat, stirring continuously until it thickens.
Once thickened, continue stirring for an additional 2 to 3 minutes.
Remove the pastry cream from heat and transfer to a container to cool, covering with plastic wrap to prevent a skin from forming.
After 40 minutes, divide the rested dough into about 10 pieces and shape them into balls.
