1 tbsp butter
1/2 calibracy sausage, sliced thinly
3 cloves garlic, finely chopped
1 chopped onion
1/2 green bell pepper, cut into small strips
1/2 red bell pepper, chopped
1/2 finely grated carrot
1 chopped tomato, without seeds
1 tsp salt
1 tsp sweet paprika
1/2 tsp ground black pepper
1 cup cooked shredded chicken, already seasoned
1/2 bunch chopped cilantro or parsley
1/2 cup frozen peas
2 cups raw white rice, washed and drained

Add 1 tbsp of butter into the pot and let it melt.

Add 1/2 calibracy sausage sliced thinly and 3 cloves of finely chopped garlic to the pot.

Saute the sausage and garlic until the sausage is golden and the garlic is fragrant.

Add 1 chopped onion to the pot and saute until tender.

Add 1/2 green bell pepper cut into small strips and 1/2 red bell pepper chopped to the pot.

Add 1/2 finely grated carrot and 1 chopped tomato without seeds to the pot.

Saute all ingredients until they are tender and nicely combined.

Season with 1 tsp of salt, 1 tsp of sweet paprika, and 1/2 tsp of ground black pepper.

Add 1 cup of cooked shredded chicken and 1/2 bunch of chopped cilantro or parsley to the pot.

Add 1/2 cup of frozen peas and 2 cups of raw white rice, washed and drained.

Saute everything again to allow the rice to absorb the flavors.

Add enough hot water to fully cover the rice and stir everything together.

Let it cook for 10 to 15 minutes, uncovered, until the water evaporates.

Add chopped fresh cilantro or parsley and gently mix it in.

Cover the pot and cook over low heat for about 15 more minutes to finish cooking the rice.

Turn off the heat and let the rice rest.

Fill a mold with the rice, pressing gently to hold its shape and level the top.

Unmold the rice onto a plate, centering it well for presentation.
