70g sugar (for egg whites)
60g sugar (for egg yolks)
1 cup coconut flakes
1 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt

Add 2 cups of milk (400g), 1/2 cup of olive oil (100cc), and 150g of cornmeal into a large pot.

Heat the mixture on the stove, stirring until it thickens and becomes smooth.

Once thickened, remove from heat and let it cool slightly.

Separate the egg whites from the yolks.

In a bowl, beat the egg whites until frothy, then gradually add 70g of sugar and continue beating until stiff peaks form.

In another bowl, mix the egg yolks with 60g of sugar and 1 cup of coconut flakes.

Add 1 teaspoon of baking powder to the egg whites and mix well.

Combine the egg yolk mixture with the cornmeal mixture and mix until smooth.

Gently fold in the beaten egg whites in batches, being careful not to deflate them.

Preheat the oven to 170°C (338°F).

Pour the batter into a prepared baking dish.

Bake in the preheated oven for 40 to 45 minutes, checking for doneness with a toothpick.
