1.5kg baking potatoes
1 medium onion
1 can chopped tinned tomatoes
1/2 cup oil
2 teaspoons salt
1 teaspoon coriander powder
1 teaspoon garam masala
1 teaspoon deghi mirch
1/2 teaspoon chilli powder
1/2 teaspoon turmeric powder
1 tablespoon cumin seeds
1 tablespoon fenugreek leaves
1 teaspoon ginger paste
1 teaspoon garlic paste
fresh coriander for garnish

Peel and cut the baking potatoes into discs.

Finely dice the medium onion.

Blitz the canned chopped tomatoes to a puree.

Heat the oil in a pan.

Add the diced onion and sauté until translucent.

Stir in the ginger and garlic paste, cooking for a minute.

Add the cumin seeds and fenugreek leaves, frying for a short time until fragrant.

Add the potato discs to the pan and mix well with the spices.

Pour in the tomato puree and mix thoroughly.

Season with salt, coriander powder, garam masala, deghi mirch, chilli powder, and turmeric powder.

Cover and cook until the potatoes are tender, stirring occasionally.

Garnish with fresh coriander before serving.
