olive oil

🥗Healthier: coconut oil

💰Cheaper: vegetable oil

Coconut oil enhances flavor and is solid at room temp.

1

Preheat the oven to 300°F (150°C) and line a baking sheet with parchment paper.

2

In a large mixing bowl, add 4 cups of old-fashioned rolled oats.

3

Add 1 cup of coarsely chopped nuts (using pecans, but can substitute with cashews, walnuts, almonds, or peanuts).

4

Add 1/2 cup of unsweetened shredded coconut.

5

In a separate bowl, pour in 1/2 cup of oil (avocado or coconut oil recommended, but vegetable oil will work as well).

6

To the oil, add 1/4 cup of honey, 1/4 cup of high quality maple syrup, 1/8 cup of brown sugar, 1/2 teaspoon of salt, 1 teaspoon of vanilla extract, 1/2 teaspoon of cinnamon, and a pinch of nutmeg. Stir until well combined.

7

Pour the mixture over the dry ingredients and mix until everything is evenly coated.

8

Spread the mixture onto the prepared baking sheet evenly.

9

Bake in the preheated oven for 30-35 minutes, stirring carefully halfway through.

10

Check for doneness by looking for a toasted appearance and a good smell. If it's still tacky or sticky, bake for an additional 5-10 minutes.

11

Once cooled completely, the granola should break into little chunks. Store in an airtight container for up to 6 months.
