Brazilian Cheese Bread
Cultural Context
Originating from the state of Minas Gerais in Brazil, Pão de Queijo (Cheese Bread) is a beloved snack that showcases the country's affinity for cheese and tapioca. Traditionally enjoyed at breakfast or as a snack, these gluten-free treats are a staple in Brazilian households. Today, they have gained international popularity, often found in Brazilian restaurants and bakeries around the world.
Add milk, olive oil, and a pinch of salt to a pan.
Bring the mixture to a simmer over medium-high heat, ensuring it does not reduce.
Once it simmers, turn off the heat and pour it into the tapioca flour.
Mix with a fork until the tapioca flour is no longer visible, noting the mixture may look shaggy.
Let the mixture sit for 5 minutes to cool down.
Add grated mozzarella and parmesan cheese to the mixture.
Add 1 large beaten egg and a shake of cayenne pepper to the mixture.
Stir until everything is combined and a soft sticky dough forms.
Portion the dough onto a Silpat or parchment-lined baking sheet using a scooper.
Optionally, use damp hands to roll the dough into balls or pour it into muffin cups for a different texture.
Transfer the baking sheet to a preheated 400°F oven and bake for about 20 minutes until puffed and lightly golden.
Let the cheese bread cool for a few minutes before serving.
