Brazilian Cheese Bread
Cultural Context
Originating from the state of Minas Gerais in Brazil, Pão de Queijo (Cheese Bread) is a beloved snack that showcases the country's affinity for cheese and tapioca. Traditionally enjoyed at breakfast or as a snack, these gluten-free treats are a staple in Brazilian households. Today, they have gained international popularity, often found in Brazilian restaurants and bakeries around the world.
Prepare 180g of tapioca starch.
Add 50g of olive oil, 1 egg, 100g of mozzarella cheese, and 150g of milk into a mixing bowl.
Shake well and mix together until combined.
Grind the mixture lightly; it doesn't require kneading.
Add 1g of salt and some Parmesan powder for extra flavor.
Lightly grease a muffin pan with olive oil or use a waffle pan.
Fill the pan with the dough only halfway to allow for rising.
Tap the pan on the bottom to release air bubbles.
Bake in a preheated oven at 200℃ for 20-25 minutes until golden brown.
Remove from the oven and let it cool slightly before taking it out of the mold.
Let the bread cool down a little; it looks like a lumpy potato.
Bake another batch with the remaining dough, yielding a total of 11 pieces.
Allow the second batch to cool down as well.
Taste the bread while it's warm for the best experience.
