1 large egg

1/2 cup shredded cheddar cheese
1 1/2 cups tapioca flour

Preheat the oven to 400 degrees Fahrenheit (205 Celsius).

In a blender, add 3/4 cup of milk.

Add 1 large egg to the blender.

Pour in 1/3 cup of olive oil.

Add 1/2 cup of shredded cheddar cheese.

Add 1 1/2 cups of tapioca flour to the mixture.

Add 1/2 teaspoon of salt (reduce if using salty cheese).

Blend the mixture for a couple of minutes until well blended.

Use a spatula to scrape down the sides of the blender to incorporate any stuck tapioca flour.

Spray a mini muffin pan with cooking spray or use a paper towel to spread cooking oil evenly.

Fill the mini muffin pan almost all the way with the batter, using a spatula to get the remaining batter out of the blender.

Bake in the preheated oven on the middle rack for about 20 minutes until puffed up and lightly golden brown.

Transfer the cheese bread to a wire rack to cool completely.
