1 1/4 cups tapioca starch
1 cup smoked gouda cheese
1/4 cup sharp cheddar cheese
1/4 cup parmesan cheese
pinch of salt
2 tablespoons red wine vinegar
juice of 1 lemon
fresh oregano (or dried)
cumin
red pepper flakes
green onion
smoked paprika
garlic

Make the chimichurri by blending garlic, parsley, red wine vinegar, lemon juice, oregano, cumin, and red pepper flakes with olive oil.
