1 cup Fontina cheese
1 cup cheddar cheese
1 cup colby jack cheese
1 cup Parmesan cheese
3/4 cup whole milk
1/3 cup olive oil
1 extra large egg (75g)

Preheat the oven to 400°F.

Measure 1 cup of mixed cheeses (Fontina, cheddar, colby jack, and Parmesan).

In a blender, add 3/4 cup of whole milk, 1/3 cup of olive oil, 1 extra large egg, and 1/2 teaspoon of salt.

Blend the mixture for 1 minute until well incorporated.

Add 1 1/3 cup of tapioca flour to the blender and mix again.

Use a rubber spatula to ensure nothing is stuck to the bottom of the blender.

Add the cheese to the batter and blend for just 1 second to mix.

Grease a mini muffin tin with olive oil.

Fill each muffin cup with about 1 tablespoon of batter, filling to the top.

Bake in the preheated oven for 15 to 20 minutes, checking for doneness.
