1 teaspoon ground cinnamon
1 teaspoon ground paprika

2 tablespoons fresh parsley chopped
2 tablespoons fresh mint chopped
1 teaspoon salt
½ teaspoon black pepper
1 tablespoons olive oil for grilling or frying

In a large mixing bowl, combine the minced lamb, onion, garlic, cumin, coriander, cinnamon, paprika, allspice, parsley, mint, salt, and pepper. Mix well until all the ingredients are evenly distributed.

Using your hands, form the lamb mixture into oval-shaped patties or roll them onto skewers. Aim for about 8-10 koftas, depending on the size.

Preheat your BBQ/ grill to medium-high heat. Brush the koftas with a little olive oil to prevent sticking, and grill for about 3-4 minutes per side, or until fully cooked.

Heat a tablespoon of olive oil in a griddle pan over medium-high heat. Add the koftas and cook for 3-4 minutes per side until browned and cooked through.

Once cooked, let the koftas rest for a couple of minutes before serving.
