500g lamb or goat meat
1 cinnamon stick
1 tsp black peppercorns
6 green cardamoms
2 black cardamoms
some bay leaves
6 cloves
salt to taste
some water
2 medium size onions thinly sliced
1 green chilli thinly sliced
3 small tomatoes chopped
6 cloves of garlic grated
nob of ginger grated
fresh coriander leaves chopped
1/2 tsp turmeric powder
1/2 tsp red chilli powder
1 tsp cumin powder
2 tsp coriander powder
2 tbsp oil

Combine all the pressure cook ingredients including lamb in a pressure cooker and cook for 20 min or according to your pressure cooker instruction.

Meanwhile heat a saucepan and add oil to it.

Once the oil heats up, add grated ginger and garlic and cook for 2 min.

Add sliced onion along with salt and cook for 5 min or until onions get caramelised.

Now add green chilli and chopped tomatoes.

Add all the dry spices and simmer for 10 min (add some water if needed).

Now add cooked lamb with liquid (you can reduce the liquid if it's too much).

Simmer for 10 min or until sauce reduces to half.

Garnish with fresh coriander and serve the lamb curry with choice of rice or roti.
