1

Peel the potatoes and place them in cold water with a little salt.

2

Bring the water to a boil and boil the potatoes until super soft.

3

Drain the potatoes and mash them without adding anything else.

4

Prepare the vegetable mixture: use about 1/2 cup each of grated carrot, celery, bell peppers, tomato, and frozen peas, rinsed in warm water, along with one chopped onion and fresh chili to taste.

5

In a pan, heat 3 tablespoons of oil over medium heat and add 2 teaspoons of cumin seeds.

6

Add the prepared vegetables and cook for 4-5 minutes on a vigorous heat.

7

Add 1 tablespoon of garlic ginger paste, a pinch of black pepper, salt, 2 teaspoons of chili powder, and 1 teaspoon of turmeric to the vegetable mixture and stir well.

8

After cooking the vegetable mixture for another 4 minutes, add the mashed potatoes and 1/2 cup of chopped cilantro, mixing everything together thoroughly.

9

Add 4 tablespoons of flour to the mixture to help bind it and let it sit for a moment.

10

Form the mixture into small patties using about a tablespoon of the mixture for each patty, flattening them out.

11

Heat oil in a pan for deep frying the patties, or you can shallow fry them if preferred.

12

Fry the patties for about 3 minutes on each side until golden brown, being careful not to touch them too soon to avoid sticking.

13

Once cooked, remove the patties from the oil and place them on kitchen paper to absorb excess oil.

14

Serve the aloo tikki with pickles or chutneys, such as mango pickle, green chutney, and tamarind chutney.
