2 tablespoons dried pomegranate seeds (anardana)

6-7 large fresh mint leaves

Boil 1 kg of red potatoes in a pot covered with boiled water for 10 to 15 minutes until tender.

Check the potatoes with a knife; if it goes in easily, they are done. Drain the water and let the potatoes cool for 10 to 15 minutes.

Peel the cooled potatoes and break them down slightly with a potato masher, but do not mash completely.

Add the finely diced red onion to the potatoes.

Mix in the dry spices: salt, chili powder, coriander powder, garam masala, dried chili flakes, whole cumin seeds, and dried pomegranate seeds. Break up any clumps of pomegranate seeds.

Using gloves, mix the ingredients thoroughly while the mixture is still warm.

Add chopped fresh coriander and mint to the mixture and combine well.

Add 5 heaped tablespoons of rice flour to the mixture and mix until well combined, ensuring the mixture is nice and dry.

Form the mixture into patties the size of a golf ball, pressing firmly to avoid cracks.

If desired, freeze the patties by placing them on a flat baking sheet lined with greaseproof paper for 1-2 hours, then transfer to a Ziploc bag or container.

Fry 3-4 patties at a time in the hot oil for about 30 seconds without touching them to prevent splitting.

Gently flip the patties and fry until golden brown, then remove and place on kitchen paper to drain excess oil.
