500g mutton (bone-in)
1 medium bottle gourd (ghiya/lauki), peeled & cubed
2 onions (finely chopped)
2 tomatoes (chopped/pureed)
2 green chilies (slit)
1 tbsp ginger-garlic paste
½ cup yogurt
1 tsp red chili powder
½ tsp turmeric powder
1 tsp coriander powder
1 tsp cumin powder
½ tsp garam masala
Salt to taste
¼ cup oil or ghee
Fresh coriander leaves for garnish

Heat oil in a pot, add chopped onions, and sauté until golden brown.

Add ginger-garlic paste and stir until fragrant.

Add mutton and cook until it changes color.

Mix in tomatoes, salt, red chili, turmeric, coriander, and cumin powder. Cook until oil separates.

Add yogurt and cook until the mutton is tender.

Pour in water as needed, cover, and let it cook until the meat softens.

Add bottle gourd cubes and cook until soft but not mushy.

Sprinkle garam masala, add green chilies, and cook for a few more minutes.

Garnish with fresh coriander and serve hot!
