2 lbs lamb shoulder, cut into chunks
2 cups plain yogurt
2 large onions, finely chopped
4 cloves garlic, minced
1 inch ginger, grated
2 tbsp vegetable oil
2 tsp cumin seeds
2 tsp coriander powder
1 tsp turmeric powder
2 tsp garam masala
1 tsp red chili powder
1/2 tsp salt
1/2 cup water
Fresh cilantro for garnish

Heat the vegetable oil in a large pot over medium heat.

Add the cumin seeds and let them sizzle for a few seconds.

Add the chopped onions and sauté until they are golden brown.

Stir in the minced garlic and grated ginger, cooking for another minute.

Add the lamb chunks to the pot and brown them on all sides.

In a bowl, whisk together the yogurt, coriander powder, turmeric powder, garam masala, red chili powder, and salt.

Pour the yogurt mixture over the browned lamb and stir well to coat.

Add water to the pot, cover, and let it simmer on low heat for about 1.5 to 2 hours, or until the lamb is tender.

Stir occasionally and add more water if necessary to prevent sticking.

Once the lamb is tender, adjust seasoning if needed and garnish with fresh cilantro before serving.
