1 lb. lamb cut into small pieces
1 chopped medium onion
1/2 cup corn oil
3 cloves sliced garlic
1 tablespoon chopped ginger
1/2 teaspoon salt
1 tablespoon coriander paste
1 tablespoon tomato sauce
1 tablespoon tamarind sauce
1 tablespoon coconut milk
1 tablespoon hot mustard
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon garam masala
6 cups water
1/2 teaspoon dried mint
1/2 cup fresh chopped mint

Take a pot and put six cups of water in it. Bring it to boil.

When the water starts to boil, put lamb pieces in it. Cover the pot and bring the temperature to low and boil the lamb for 1 hour.

When the lamb is boiled for 1 hour, remove the pot from the heat. Let the lamb cool down.

Remove the lamb in a bowl with some of the broth from the pot until the lamb is properly covered with the broth.

Put the rest of the broth in a separate bowl and save it to use in the curry.

Put corn oil in a pan (or pot) and let it heat up on high heat.

Once it is hot put chopped onion in it and keep stirring till it becomes light brown.

When you start smelling the burning of the onion add sliced garlic and chopped ginger to the onion. Stir the mix well for about half a minute.

Now turn the temperature to medium. Add coriander paste, tomato sauce, tamarind sauce, coconut milk and hot mustard. Blend the mix well.

Add some broth in the pan so the mix does not dry out. Stir the mix well.

Now add salt, ground cumin, ground coriander, garam masala and dried mint in it. Add a little extra broth to the mix. Blend the content well and let it cook for about 5 minutes.

After 5 minutes, add the boiled lamb in the pan. Stir the mix till all the lamb is blended well with the mixed curry masala.

Cover the content with a lid and turn the temperature to low and cook it for 15 minutes.

After 15 minutes are over, remove the lid and check the blend. Adjust the thickness of the curry to your liking with the broth.

Let the curry rest for about 10 minutes and take it out in a bowl. Garnish the curry with fresh mint.
