1

Rinse goat meat in vinegar and water, then rinse with fresh water, drain, and pat dry.

2

Cut goat meat into 1-inch chunks or smaller.

3

Add custom seasoned blend to the meat, along with crushed pimento seeds, onions, fresh thyme, scallions, bay leaves, vegetable oil, soy sauce, all-purpose seasoning, curry powder, turmeric, salt, onion powder, and garlic powder.

4

Massage the seasoning into the goat meat until fully coated, adding more vegetable oil if necessary.

5

Cover the seasoned meat and let it marinate for a few hours, preferably overnight.

6

Heat vegetable oil on medium flame for 3-4 minutes until hot.

7

Add garlic and scotch bonnet pepper to the oil and sauté for 2-3 minutes to infuse the flavors.

8

Add the marinated goat meat and sear for 5 minutes, turning to brown all sides.

9

Add 2 cups of water to the pot, ensuring the meat is covered, and increase the flame to medium-high. Cover and cook for 30 minutes.

10

While the goat is cooking, peel and dice potatoes, placing them in water to prevent oxidation.

11

After 30 minutes, check the meat for sticking or burning and ensure there is enough liquid. Cover and cook for another 20 minutes.

12

After 20 minutes, check the tenderness of the meat. If not tender, continue cooking until it is easily pierced with a fork.

13

Add coconut milk to the pot along with the diced potatoes, and add more water if needed to maintain liquid levels. Reduce heat to medium and cover, cooking for 15 minutes.

14

After 15 minutes, add butter for flavor, check for sticking or burning, and ensure liquid levels are adequate.

15

Remove the scotch bonnet pepper to prevent bursting and taste the gravy for seasoning adjustments, adding more all-purpose seasoning if necessary.

16

Reduce heat to low and simmer for 5-10 minutes to achieve a thick gravy consistency.
