Jollof Rice with Goat Meat

Jollof rice, a beloved dish across West Africa, is thought to have originated in Senegal. Traditionally served at celebrations and gatherings, it symbolizes unity and festivity. Each country has its unique take, with variations in spices and cooking techniques. Today, Jollof rice has gained international popularity, often enjoyed at parties and family meals worldwide, showcasing the rich culinary heritage of West Africa.

Transfer washed goat meat into a saucepan.
Dice some onions and add them to the goat meat.
Season the goat meat with Italian seasoning, ground ginger, ground cumin, garlic powder, cayenne pepper, chicken seasoning, and salt, approximately one teaspoon each.
Coat the goat meat with the seasonings and transfer to the stove to cook.
Cut tomatoes into quarters and place them in a bowl.
Cut chili peppers (optional) and add them to a baking dish.
Cut onions for the jollof base and add them to the baking dish with ginger and garlic.
Add olive oil to the baking dish and mix the vegetables.
Broil the vegetables in the oven to achieve a smoky flavor.
Check on the goat meat, adding a little water if needed, and cook for about 35 minutes until seasoned and charred.
Blend the broiled vegetables and set aside.
Heat oil in a saucepan and fry the goat meat until browned on both sides, then set aside.
Reduce the oil in the saucepan and add onions, frying until translucent.
Add curry powder, rosemary, aniseed, and oregano to the onions and mix.
Add tomato paste to the mixture and stir well.
Add the blended smoky vegetables to the saucepan and cook until oil rises to the top of the stew.
Season the stew with shrimp powder, white pepper, bay leaves, black pepper, shrimp seasoning, nutmeg, and smoked paprika.
Mix well and let it cook for a bit until the bottom has some browning.
Add washed rice to the stew, ensuring the water runs clear before adding.
Toast the rice slightly in the stew mixture.
Pour in goat meat broth and a little water, being careful not to add too much.
Cover tightly and cook on medium heat to allow the rice to steam and avoid sogginess.
Add goat meat and sweet peas to the rice.
Sprinkle a little water if necessary to create steam for cooking the rice.
Serve the jollof rice with coleslaw and enjoy.
