1

Begin by cooking the tomatoes using 2 cans of chopped canned tomatoes to reduce cooking time.

2

Chop and blend one onion, ginger, garlic, and the peppers to season the lamb.

3

Cut 2 kg of lamb thigh into smaller pieces, removing excess fat.

4

Place the lamb in a pan and add the blended ginger, garlic, onion, and pepper along with salt and 1 lamb seasoning cube. Mix well.

5

Cook the lamb on low to medium heat until soft, optionally letting it sit to absorb flavors.

6

Check the lamb; once cooked, set it aside and keep the stock for later use.

7

In the same pan, pour oil and heat it before adding the cooked lamb to fry until golden brown.

8

Add one chopped onion to the oil and fry for a couple of minutes before adding a tube of tomato paste. Cook until it clumps together.

9

Add 1/2 teaspoon of rosemary to the tomato paste and cook for about 5 minutes.

10

Add blended tomato puree, blended onion, garlic, ginger, and red bell pepper to the sauce, mixing well.

11

Incorporate the lamb stock into the sauce and cook until it thickens, approximately 20 to 30 minutes, adjusting salt to taste.

12

Prep salad ingredients by washing salad leaves with vinegar and chopping them along with cucumber and carrots.

13

Once the sauce is ready, remove lamb meat with bones for later use and set aside some sauce if needed.

14

Wash 1 kilogram of jasmine rice a few times and add it to the sauce, mixing well.

15

Add 200-250 ml of water to the rice depending on desired softness, cooking initially on medium to high heat, stirring occasionally.

16

As water absorbs, gradually reduce heat from medium to low, ensuring to monitor to prevent burning.

17

Add vegetables to the rice once water is almost absorbed, mixing well and covering to cook.
