In Ghana, it's a festive staple, often served at celebrations and gatherings, showcasing a vibrant blend of flavors and colors. The dish has gained international popularity, inspiring variations worldwide, while sparking friendly rivalries over the best recipe among neighboring countries.
long-grain rice

Paprika provides flavor without the heat.
Heat a pot and add cooking oil.
Add 3 bay leaves, dry rosemary, cloves, and calabash nutmeg, stirring for about one minute.
Add blended peppers and onions to the pot.
Add 2 tomato paste and blended garlic and ginger, stirring everything together.
Cook on medium heat for about 5-10 minutes until the sauce thickens.
Add jollof seasoning, curry powder, and canned mackerel, rinsing the can before adding.
Add 1 tablespoon of salt and stir, cooking for another 5-10 minutes.
Add 3 cups of basmati rice without washing it, stirring to combine with the sauce.
Add 1 cup of hot water to the pot, ensuring the water level is the same as the rice.
Cover and cook on medium or low heat for about 5-10 minutes.
Stir the rice and check for water; if there's still water, cover and cook for another 5-10 minutes.
In a separate pot, add oil and chopped sausages, cooking on medium heat for 2-3 minutes with chicken seasoning.
Set aside the cooked sausages.
Stir the jollof rice again, cover, and cook for another 5 minutes.
Add mixed vegetables, chopped carrots, green bell peppers, and scallions to the rice.
Add the fried sausages and stir everything together, covering for 2-3 minutes to steam the vegetables.
Fry ripe plantain until golden brown and set aside.
Serve the jollof rice and enjoy.
