Plantain Fufu

Cultural Context

Plantain fufu is a staple in West African cuisine, particularly in Ghana, where it serves as a versatile accompaniment to soups and stews. Traditionally made by boiling and mashing ripe plantains, it embodies the region's emphasis on starchy staples. Fufu can vary in preparation, with variations including the use of cassava or yam, and has gained popularity beyond Africa, appearing in Caribbean and Latin American cuisines as well.

1

Wash and peel off the skin of the plantain.

2

Cut into small chunks to help the blender blend quick and smooth.

3

Add little water and blend till smooth. Do not add too much water, else your plantain puree will be too light and that will make you spend a lot of time stirring on the stove top.

4

Once your plantain puree is smooth, add it to the pot and begin to stir immediately so it doesn't form lumps.

5

Don't stop stirring until it begins to thicken up.

6

Add a little water to it and cover, cook on low heat for 5 minutes so that the fufu will cook really well.

7

After 5 minutes, open and stir very well until it becomes stretchy and lump free.

8

Serve directly in a plate or preserve with a cling film and serve when you are ready to eat.
