Jollof Rice

Season 1 kilogram of chicken drumsticks with sea salt, black pepper, Maggi all-purpose seasoning, garlic powder, onion powder, and green seasoning. Mix well.

Add gravy browning for color, cover, and refrigerate overnight.

Prepare a roasting tray with rosemary, onions, and potatoes, drizzling with garlic infused olive oil.

Place the seasoned chicken in the tray and bake at 200 degrees Celsius for 1 hour and 20 minutes, basting every 20 minutes with the juices.

Slice 3 onions and set aside. In a food processor, blend 1 white onion, 1 bell pepper, 3 tomatoes, 4 cloves of garlic, and 1 scotch bonnet pepper with a little water.

In a clean pot, heat oil to cover the bottom, add sliced onions, and sauté on low to medium heat until translucent.

Add 2 tablespoons of tomato puree to the onions and cook until nicely incorporated, stirring occasionally to prevent burning.

Add the blended tomato mixture to the pot, season with salt, curry powder, and 2 seasoning cubes, and stir in 2 small bay leaves. Cook for 20 minutes, being cautious of splattering oil.

Check the stew for salt, then add 4 cups of washed long grain rice, mixing well.

Cover the rice with just enough water to cover the top, cover the pot, and cook on low heat for 10 minutes.

After 10 minutes, stir the rice and cover again to continue steaming.

Once the chicken is done, remove it from the oven and plate it with the tender potatoes.

Peel 2 ripe plantains and cut them in half, then slice across into pieces.

Season the plantain pieces with onion powder, nutmeg, allspice, mixed spice, cloves, ginger, and a pinch of salt. Let them rest for 10-15 minutes.

Heat oil in a pan and fry the seasoned plantains in batches, avoiding overcrowding the pan.

Once fried, place the plantains on a plate lined with paper towels to absorb excess oil.

Transfer the jollof rice to a ceramic bowl, noting it may not have the bright red color typical of jollof rice but still tastes great.
