1 cup sliced onion
1 tablespoon fresh thyme
1 tablespoon curry powder
3 cloves chopped garlic
1 tablespoon ginger
1 teaspoon salt
1 tablespoon chicken seasoning
1 cup bell peppers
1 scotch bonnet pepper
4 cups tomatoes
1/4 cup vegetable oil
2 bay leaves
3 cups long-grain rice
4 cups boiling water

Cook hard chicken with sliced onion, fresh thyme, curry, chopped garlic, ginger, salt, and chicken seasoning in a pot for 20-25 minutes to release juices.

Add water to the chicken and cook for 35-40 minutes until tender, then separate chicken from the stock and strain the stock.

Clean bell peppers in saltwater, remove seeds, and cut tomatoes open to check for worms.

Roast bell peppers, onions, and Scotch Bonnet in a pan with oil on medium-high heat for about 25 minutes, flipping halfway through.
