Ghanaian Jollof Rice

Each country has its own variation, but Ghanaian Jollof is celebrated for its rich tomato base and unique blend of spices, making it a staple in both home cooking and festive occasions.

½ cup vegetable oil
8 onions (6 brown, 2 red), peeled
4 cloves garlic, peeled
4 medium red chillis
1 teaspoon rosemary, finely chopped
1 teaspoon thyme, picked
6 spring onions, green and white parts separated
1 kg fresh tomatoes
2 bay leaves
1½ tablespoons tomato paste
Salt to taste
8 cups vegetable or chicken stock
5 cups jasmine rice, rinsed
Plantains to serve, if desired

Blend 4 brown and 2 red onions, set aside.

Slice remaining 2 brown onions with white parts of spring onions, set aside.

Blend tomatoes with green parts of spring onions, garlic and chillies, set aside.

Heat ½ cup vegetable oil on low heat.

Slowly fry blended onions, tomato mix, sliced onions, rosemary and thyme until soft (approx. 20-30 minutes).

Add tomato paste and bay leaves, salt to taste.

Cook 10 - 15 minutes until it looks like a rich tomato gravy (needs to be well cooked down before rice is added).

Add rice and stock.

Cook on low for about 40 minutes, covered.

Serve with fried sliced plantains, if desired.
