Pour milk into a bowl.
Heat milk to 180°F using a digital thermometer, ensuring it doesn't exceed this temperature.
Add butter to the warm milk to let it melt.
Turn off the flame once the butter is melted and add brown sugar to the mixture.
Cool the mixture down to 115°F before adding the yeast.
Once cooled, add the active dry yeast to the mixture and stir until frothy, about 5 minutes.
In a separate bowl, combine flour and salt, mixing well.
Add vanilla extract and cinnamon to the yeast mixture.
Add eggs to the mixture and stir until combined, then mix in the flour gradually.
Use a spatula to fold the mixture until it becomes a sticky dough.
Grease a bowl with cooking oil and place the dough inside, covering it with Saran wrap.
Let the dough rise in a warm place or an unheated oven for about 1 hour or until doubled in size.
Once risen, punch down the dough and roll it out on a floured surface to about 1/4 inch thick.
Heat oil to 375°F for frying.
Cut the rolled dough into squares or rectangles.
Fry the dough pieces in batches until golden brown, about 2-3 minutes per side.
Remove beignets from oil and drain on paper towels.
