Start by measuring out 1.5 kg of goat meat, ensuring it has more meat than bone.

Add 1 tsp of everyday seasoning, 1 tsp of garlic powder, 1 tsp of black pepper, 1 tsp of meat seasoning, and 1 tsp of all-purpose seasoning to the goat meat.

Add a bit of salt to the goat meat, as the seasonings already contain salt.

Blend all the seasonings together and add them to the goat meat along with 1.5 tbsp of curry powder.

Chop up the herbs: start with the onion, then the scallion, garlic, and ginger. Cut the scotch bonnet pepper, using only a portion to control spiciness.

Massage the chopped herbs and seasonings into the goat meat, ensuring everything is well combined. You can marinate it overnight or cook it immediately if short on time.

Heat 2 tbsp of olive oil in a pot over medium heat and add 1 tbsp of curry powder to burn it for a few seconds.

Add the goat meat to the pot and sauté for about 5 minutes, then cover the pot.

In the same bowl used for the goat meat, add 2 cups of warm water and pour it into the pot, ensuring the water covers the meat.

Allow the goat meat to cook for at least 1 hour on medium heat with the pot covered, checking occasionally to see if more water is needed.

After 1 hour, check the goat meat; if it needs more time, cook for an additional 20 minutes, adding about 1/4 cup of water if necessary.

Once the meat is tender, add 1 carrot, a small amount of scallion, a small amount of fresh thyme, and 1 average potato to the pot.

Add 1 tsp of all-purpose seasoning and salt to taste, then stir everything together.

Cover the pot and let it cook for another 15 minutes until the vegetables are tender.
