1

Start by marinating goat meat with 1/3 cup Jamaican curry powder, 1/3 cup Jamaica nice curry powder, and 1/3 cup jerk seasoning for at least 1 hour, preferably longer.

2

Use the sauté function on the Instant Pot and add a bit of oil to activate the curry powder.

3

Add minced garlic and ginger (about a finger length) to the pot and sauté for about 30-45 seconds until fragrant.

4

Add the marinated goat meat to the pot and let it sweat for a couple of minutes with the lid loosely on.

5

If the meat starts to stick to the bottom, add a couple dashes of Worcestershire sauce to deglaze the pot.

6

Pour in 1 cup of beef broth into the pot, swishing it around to pick up any drippings.

7

Add 1 cup of bell pepper and onion blend, followed by 2 cups of yellow potatoes, and mix well.

8

Add in 2 scotch bonnet peppers for heat and a can of butter beans (optional).

9

Seal the Instant Pot and set it to pressure cook on high for 30 minutes.

10

After 30 minutes, perform a quick release of the pressure.

11

Stir in coconut milk (optional) and let it incorporate into the mixture before serving.
