2 medium potatoes
3 tablespoons vegetable oil

Add goat meat to a bowl.

Pour apple cider vinegar over the goat meat and wash thoroughly with cold water, repeating the process a couple of times.

Add chopped garlic, chopped onions, green bell pepper, red bell pepper, and scotch bonnet pepper to the washed goat meat.

Add spring onions and thyme to the mixture.

Add two types of curry powder: better pack curry powder and Vidya curry powder.

Cover the meat and place it in the refrigerator to marinate overnight.

Add the marinated goat to the heated oil and cover to allow it to steam for 10 minutes without adding water.

After 10 minutes, add one liter of hot water to the pan.

Cover and cook the goat meat on low heat for about 1 hour and 15 minutes until tender.

After about an hour, add diced potatoes to the pot to thicken the curry.
