5 lbs. goat meat, cut into chunks
3 tablespoons Jamaican curry powder
2 tablespoons of Jamaican all-purpose seasoning
1 tablespoon of salt
1 tablespoon of smoked paprika
2 tablespoons of green seasoning
½ large onion, chopped
3 cloves garlic, chopped
1 thumb of fresh ginger
3 stalks of scallions
1 scotch bonnet pepper
3 sprigs of thyme
1 tablespoon of pimento berries/allspice
1 tablespoon of cloves
2 bay leaves
1/3 cup of olive oil
2 potatoes, peeled and cubed
Water or low sodium vegetable stock (enough to cover the meat)

In a large bowl, combine the goat meat with the green seasoning, curry powder, all-purpose seasoning, salt, and smoked paprika. Mix well to ensure the meat is evenly coated. Cover the bowl with plastic wrap and marinate for at least 3 hours, preferably overnight.

Heat the olive oil in a large pot over medium-high heat. Add the marinated goat meat to the pot and briefly brown on all sides. Cover and allow the goat meat to simmer and cook in its own juice.

Pour the water into the pot, ensuring that the goat meat is completely submerged. Bring to a boil, then reduce the heat to medium/low and cover the pot. Let it simmer for 1 and a half to 2 hours, or until the goat meat becomes tender and flavorful. Stir occasionally and add more water if necessary to prevent sticking.

Once the meat is tender, add the cubed potatoes, chopped onion, garlic, ginger, scallion, bay leaves, scotch bonnet pepper, thyme, allspice, and cloves to the pot. Stir well to combine. Continue to simmer for an additional 30 minutes, or until the vegetables are cooked through and the sauce has thickened.

Remove from heat and let the curry goat rest for a few minutes before serving.
