Squeeze lemon juice over the goat meat.

Add a generous amount of black pepper and dry thyme.

Add fresh pieces of thyme and green onions to the goat meat.

Pour in some oil (canola or vegetable) and coat everything well.

Toss the mixture and let it marinate in the fridge for 3 hours or longer.

Peel and chop the potatoes into large pieces.

Add hot oil to the pot and sauté the marinated goat meat for about 5 to 10 minutes.

Close the lid of the Instant Pot and set it to manual pressure for 30 minutes.
