Prep seasonings: rough chop scallion, thyme, garlic, onion, pimento, scotch bonnet, and thinly slice ginger.
Blend all the seasonings with about 1 tablespoon of water to make green seasoning.
Wash goat meat with lemon juice and vinegar a couple of times.
Season goat meat with the green seasoning, salt, black pepper, all-purpose seasoning, and 2 tablespoons of curry powder.
Add 1 teaspoon of ram goat soup seasoning for extra flavor.
Marinate the goat meat overnight.
Heat 1.5 to 2 tablespoons of coconut oil on high until hot.
Toast 0.5 tablespoon of curry powder in the hot oil before adding the goat meat.
Add the goat meat to the hot oil and sauté for roughly 5 minutes, stirring periodically.
Let the goat cook for another 5 minutes to develop flavor as it springs its own juices.
Transfer the goat meat to a pressure cooker and add 2 cups of hot water.
Pressure cook for 15 minutes, checking for tenderness.
After pressure cooking, add fresh thyme back to the pot with the goat meat.
Make bread crumbs using the back of bread, about 1/3 cup, and add it to the pot as a thickener.
Top up with a little hot water gradually throughout the cooking process and cook for another 15 minutes.
After 15 minutes, check for tenderness and add more water if necessary, cooking for another 7 to 10 minutes.
Add carrots, potatoes, and aromatics (scallion, onion, green bell pepper) to the pot.
Let everything cook down for another 15 to 20 minutes or until tender.
