Wash and trim excess fat from 2 pounds of goat meat.

Season the goat meat with salt, jerk seasoning, cajun seasoning, garlic, black pepper, ginger powder, goat curry powder, and regular curry powder.

Blend thyme, onion, garlic, pimento peppers, and broad leaf thyme in a blender to create a green seasoning blend.

Add 3-4 tablespoons of the green seasoning blend to the goat meat and mix everything together.

Allow the meat to marinate for at least 1 hour, or overnight for better flavor.

In a pot over medium to high heat, add cooking oil and some curry powder to toast.

Add chopped onion and garlic to the pot, then add the marinated goat meat and mix everything together.

Cover the pot and let the meat cook in its own juices for about 7 minutes.

After 7 minutes, add water to the pot until the goat meat is fully submerged, then cover and cook on the lowest heat for 1.5 hours.

After 1.5 hours, check the meat for tenderness.

Add potatoes and carrots to the pot for thickness, along with pimento peppers and bell peppers for flavor.

Pour in 1 cup of coconut milk and mix well, then taste and adjust seasoning if needed.

Add fresh thyme and a scotch bonnet pepper, cover the pot, and allow to cook for another 20 minutes.
