Wash goat meat with water and lemon juice, then drain and pat dry.

Season goat meat with a good dose of salt and mix in diced onions and half of a scotch bonnet pepper, cutting it up for more heat.

Optionally add black pepper and a tablespoon of olive oil to help coat the goat meat with curry powder, then cover and marinate overnight or for at least a couple of hours.

Heat a wide pan over medium-high heat and add a couple tablespoons of olive oil.

Add the marinated goat meat to the pan, avoiding too much onion and pepper at this stage, and sear the meat to seal in the juices without necessarily browning it.

Once the goat meat is sealed, add fresh thyme, chopped scallions, and 8 allspice berries to the pot, stirring to combine.

In the same bowl used for marinating, add 3 cups of hot water, swish it around, and pour it into the pot to cover the meat.

Bring the mixture to a boil, then reduce the heat to very low and cover the pot, allowing it to braise until the goat is tender, about 1.5 hours.

After about 1.5 hours, add quartered potatoes to the pot, stir, and bring back to a boil before reducing to a simmer for another 30-40 minutes until the potatoes are tender and the gravy thickens.
