1 tablespoon turmeric
2 tablespoons crushed coriander
2 tablespoons cumin

salt to taste
2 cups water
1/2 to 3/4 cup yogurt
1/4 cup chopped green coriander
ginger to taste
2 teaspoons Kasuri Methi
2 tablespoons chicken powder

Chop onions finely as for regular meat or handi.

Select meat; use calf's meat or mutton/lamb as preferred.

Heat a classic cooker and add about 1/2 cup of oil.

Add 1 cup of chopped onions to the oil and cook until soft, not browned.

Add 1 kg of beef and garlic ginger paste to the cooker.

Add 2 tablespoons of ground red chili, 1 tablespoon of turmeric, 2 tablespoons of crushed coriander, and 2 tablespoons of cumin to the meat.

Add salt according to taste and mix well with the meat.

Add 4 green chilies and 1 cup of chopped tomatoes to the mixture.

Fry the meat for about 5 to 10 minutes to let the spices settle in.

Add 2 tablespoons of chicken powder and mix well.

Add about 2 cups of water and cover the cooker, applying pressure for approximately 20 minutes.

After 20 minutes, release the pressure and check if the meat is tender.

On high flame, reduce the water content and mash the onion and tomato mixture.

Add 1/2 to 3/4 cup of yogurt and mix well.

Roast the mixture until the yogurt releases its water and the mixture dries a bit.

Chop additional green chilies and ginger, and add them along with 1/4 cup of chopped green coriander and 2 teaspoons of Kasuri Methi.

Mix everything well and add a little more oil to let it cook until the oil rises to the top.

Garnish with julienned ginger, chopped green coriander, and lemon juice before serving.

Serve hot with naan or roti.
