Instructions

Vindaloo is a popular dish from the Indian state of Goa, influenced by Portuguese cuisine, known for its spicy and tangy flavor profile.

Ingredients

  • 2 lbs pork shoulder, cut into 1-inch cubes
  • 1 large onion, finely chopped
  • 4 cloves garlic, minced
  • 1-inch piece ginger, grated
  • 2-3 green chilies, slit
  • 1/4 cup white vinegar
  • 2 tbsp tamarind paste
  • 2 tbsp brown sugar
  • 1 tsp turmeric powder
  • 1 tbsp cumin seeds
  • 1 tbsp coriander seeds
  • 1 tsp mustard seeds
  • 1/2 tsp black peppercorns
  • 1/2 tsp cinnamon powder
  • 1/2 tsp cloves
  • 1/2 tsp cardamom powder
  • Salt to taste
  • 2 tbsp vegetable oil

Instructions

  1. 1In a dry skillet, toast the cumin seeds, coriander seeds, mustard seeds, black peppercorns, cloves, and cardamom until fragrant. Let cool and grind into a powder.
  2. 2In a large bowl, combine the ground spices, turmeric, cinnamon, vinegar, tamarind paste, brown sugar, and salt to create a marinade.
  3. 3Add the pork cubes to the marinade, mix well, and let it marinate for at least 2 hours, preferably overnight in the refrigerator.
  4. 4In a large pot, heat the vegetable oil over medium heat. Add the chopped onions and sauté until golden brown.
  5. 5Add the minced garlic, grated ginger, and slit green chilies to the pot. Sauté for another 2-3 minutes until fragrant.
  6. 6Add the marinated pork along with all the marinade to the pot. Stir well to combine.
  7. 7Cover and cook on low heat for about 1.5 to 2 hours, stirring occasionally, until the pork is tender and the sauce has thickened.
  8. 8Adjust seasoning with salt and sugar as needed. If the sauce is too thick, add a little water to reach desired consistency.
