Prepare hung yogurt by squeezing out water from 1/2 cup yogurt using cheesecloth and letting it drain.

Gather 2 oz each of mint and coriander leaves, clean them, and chop them.

Chop 3 teaspoons of ginger, 6 cloves of garlic, and 3 green chilies.

In a food processor, combine chopped ginger, garlic, chilies, mint, coriander, juice of 1 lime, 1 teaspoon salt, and 1 teaspoon white pepper. Process until smooth.

In a bowl, add 2 lbs of boneless chicken thigh pieces and the prepared masala mixture. Mix well.

Add the hung yogurt to the chicken and masala mixture and combine thoroughly.

Cover the bowl with cling film and refrigerate for 1-2 hours (or overnight if possible) to marinate.

Before grilling, add a little oil and more salt to the marinated mixture and mix well.

Skewer the marinated chicken and place it on the barbecue to cook.

Sprinkle homemade garam masala on the kebabs before serving.
