3 tbsp oil
2 onions, finely chopped
1 tbsp ginger and garlic paste
1/2 tsp turmeric powder
1/2 tsp garam masala
1 tsp salt
1 tsp red chilli powder
1 tsp black pepper powder
1 green chilli (optional)
2 cups water
freshly chopped coriander leaves
2 small tomatoes, chopped
juice of half lemon

Heat oil in a pan and add finely chopped onions. Sauté until golden brown.

Add ginger and garlic paste, and cook for a minute.

Stir in turmeric powder, garam masala, salt, red chilli powder, and black pepper powder. Mix well.

Add the washed and cleaned boti pieces and cook until they are browned.

Add chopped tomatoes and green chilli (if using), and cook until tomatoes soften.

Pour in water and bring to a boil. Reduce heat and let it simmer until the boti is cooked through.

Finish with freshly chopped coriander leaves and lemon juice before serving.
