Preheat the oven to 325ºF and prepare a baking sheet with parchment paper.

In a large mixing bowl combine the oats, coconut, chia seeds, and slivered almonds. Pour in the melted coconut oil and fold into the oats mixture until everything is coated.

Add the honey and stir to combine. Sprinkle with cinnamon and fold in until well mixed in.

Pour the mixed oat mixture onto the prepared baking sheet. Spread out into a single layer on the pan. It is fine if it is touching.

Bake for 20-25 minutes, until golden.

Remove the granola from the oven and allow to cool for 5 minutes. Break up the granola with a spatula or wooden spoon and add in the dried cranberries.

Store in a dry place in a zip top bag or air tight container.
