Prepare the bazlama dough by mixing maida, aata, warm water, doodh, shakkar, dry yeast, and olive oil. Knead the dough and let it rise.

Once the dough has risen, divide it into portions and roll them out into flatbreads.

Cook the bazlama on a hot skillet with ghee or butter until golden brown on both sides.

For the malai kofta, mash the boiled potatoes and mix with paneer, salt, red chilli powder, haldi, raisins, cashews, zeera masala, and maida to form kofta balls.

Deep-fry the kofta balls until golden brown and set aside.

For the gravy, sauté chopped onions, tomatoes, garlic, and ginger with spices like tezpatta, dalchini, badi ilaichi, chhoti ilaichi, kali mirch, laung, and garam masala.

Add cream to the gravy and simmer until thickened. Serve the kofta in the gravy with bazlama.
