Add 1 teaspoon of dried rosemary to a bowl with 2 tablespoons of olive oil.
Add 1.5 tablespoons of freshly chopped parsley to the bowl.
Add 1.5 teaspoons of finely chopped fresh mint to the bowl.
Add salt and black pepper to taste to the bowl.
Add 2 finely chopped cloves of garlic to the bowl.
Mix all the ingredients in the bowl well and set aside.
Add 2 pimento peppers (or jalapeno as a substitute) to the ground lamb.
Add a couple pinches of kosher salt and black pepper to the lamb.
Add a couple pinches of garlic powder to the lamb.
Add 0.5 to 1 teaspoon of cumin to the lamb.
Add the previously mixed herb and oil mixture to the lamb.
Add 2 to 3 tablespoons of crumbled feta cheese to the lamb.
Gently mix all the ingredients in the lamb mixture without overmixing.
If the mixture is too dry, add 1 tablespoon of olive oil and mix gently for another 10 seconds.
Shape the lamb mixture into two 6-ounce patties on parchment paper.
Refrigerate the patties for about 20 minutes.
Prepare the grill for indirect cooking and spray the grill rack with cooking oil to prevent sticking.
Place the lamb patties on the grill opposite the hot coals and cover the grill.
Cook the patties for about 10 minutes before checking them.
After 10 minutes, check the patties and flip them for even cooking.
Cook for another 5 to 8 minutes until done.
Toast brioche buns over the hot coals for a few seconds.
Sear one side of the burgers for a few seconds to get a charred flavor.
Add a slice of cheddar cheese to one burger while searing.
Check the internal temperature of the burgers, aiming for around 136 degrees Fahrenheit.
Remove the burgers from the grill once they reach the desired temperature.
Build the sandwich starting with a layer of lettuce on the bottom.
Add garlic yogurt sauce on top of the lettuce.
Place the spicy lamb burger on top of the sauce.
Add hot sauce (Jack Spania) on top of the burger.
Add more garlic yogurt sauce to cool down the heat.
Top with Mediterranean salad to balance the flavors.
Finish with more garlic yogurt sauce on top of the salad.
