Peel the red potatoes and chop them into roughly 2.5cm / 1” cubes.

Soak the chopped potatoes in a pan of cold water to remove excess starch, rinsing until the water is clear.

Chop one brown onion into a medium dice.

Peel and chop five regular-sized orange carrots into bite-sized chunks.

Rinse the soaked potatoes under cold water until clear.

Heat a good-sized pan over high heat and add a bit of sunflower oil.

Add the steak mince to the hot pan and season with a good grip of salt.

Brown the mince for about seven or eight minutes, breaking up larger chunks as it cooks.

Add 40g of tomato puree to the pan and let it sit for a minute before stirring it into the beef.

Add a generous amount of Worcester sauce and Henderson’s Relish, stirring to combine.

Remove the meat mixture from the pan and set aside.

Lower the heat slightly and add more oil to the pan, followed by the chopped carrots.

Fry the carrots until they start to develop a slight color, then lower the heat and add the onions with a pinch of salt.

Add 30-40g of butter to the onions and let them soften for about three to four minutes.

Stir the carrots and onions together for a final minute or two.

Return the meat mixture to the pan and add a teaspoon of smoked paprika (optional).

Stir everything together and add half a tablespoon (about 7g) of plain flour, stirring to combine.

Cook the mixture for a minute or two to take the raw edge off the flour.
