Start by adding warm milk to a bowl.
Add sugar and yeast to the warm milk and stir to combine.
Let the mixture sit for a few minutes to let the yeast bloom until frothy.
Whisk 2 eggs in a separate bowl and add to the yeast mixture.
Mix together until combined, using a stand mixer or by hand.
Add all the flour and salt to the mixture and mix until it forms a shaggy dough.
Transfer the dough to a table and knead until soft, about 5-7 minutes, adding a little more flour if necessary.
Incorporate softened butter into the dough while kneading until smooth.
Place the dough in a greased bowl, cover with a cloth or cling film, and let rise until doubled in size.
Heat oil in a pan and add finely chopped onions, sautéing until translucent, about 5 minutes.
Add ginger and garlic to the onions and mix well.
Stir in curry powder and cook for about a minute.
Add green chilies and cook for another minute to cook the spices through.
Add shredded turkey to the pan and mix well to coat with the spices.
Stir in coconut milk, greek yogurt, lemon juice, mango chutney, lemon zest, and raisins, mixing to combine.
Bring the mixture to a simmer and let it thicken slightly, then season with salt and pepper.
Add chopped coriander for flavor and color, then set the filling aside to cool completely.
Once the dough has risen, punch it down to release air.
Cut golf ball-sized pieces of dough and flatten them out.
Place a tablespoon of filling in the center of each piece of dough.
Bring the edges of the dough into the center and pinch to seal, then flip and roll to seal completely.
Repeat with the remaining dough and filling, then cover and let rise for 30-40 minutes.
Brush the risen dough balls with an egg wash made from 1 egg mixed with a little milk.
Sprinkle nigella seeds on top of the dough balls for flavor and crunch.
Bake in the oven at 180 degrees Celsius for about 20 minutes until golden brown and puffed up.
