In a bowl, add 1.25 pounds of ground turkey.
Season the turkey with 1/2 teaspoon paprika, 1 teaspoon black pepper, 1 teaspoon adobo seasoning, 1/2 teaspoon chili powder, 1.5 teaspoons garlic powder, 1.5 teaspoons onion powder, 1.5 teaspoons dried thyme, 1.5 teaspoons dried oregano, 1/2 teaspoon all spice, and 1/2 teaspoon cumin.

Incorporate all ingredients thoroughly until well mixed.
Transfer the turkey mixture to a greased baking pan lined with foil, spreading it evenly.
Cover the pan with foil and bake in the oven to trap moisture.
After baking, uncover the pan and return it to the oven to crisp up the top for a few minutes.
Allow the turkey to cool slightly before slicing it into pieces.
Heat a little oil in a pan and briefly crisp the sliced turkey pieces.
For the tomato and cucumber salad, cut 2 English cucumbers into cubes.
Slice 12 ounces of grape tomatoes into quarters.
Halve 6 ounces of medium black olives and add to the bowl with cucumbers and tomatoes.
Dice half of a purple onion and add it to the salad bowl.
Toss the salad ingredients together.
In a separate bowl, mix 1/4 cup rice vinegar, 1/4 cup canola oil, 1/4 cup olive oil, the juice of 1 lemon, and season with salt and black pepper to taste.
Combine the dressing with the salad and adjust seasoning as needed.
Let the salad sit for a few hours to absorb flavors before serving.
