2 oz thawed frozen spinach, squeezed dry

1/3 cup crumbled feta cheese
2 tablespoons sundried tomato pesto
1 tablespoon chopped sundried tomatoes

1 pound lean ground turkey
1/2 cup panko breadcrumbs

Soak wooden skewers for at least 30 minutes.

Mix together 1 large egg, 1/4 cup finely diced red pepper, 1/4 cup finely diced red onion, 2 oz thawed frozen spinach (squeezed dry), 1 tablespoon finely chopped fresh oregano, 2 cloves finely minced garlic, 1/3 cup crumbled feta cheese, 2 tablespoons sundried tomato pesto, 1 tablespoon chopped sundried tomatoes, a generous grind of fresh black pepper, and 3/4 teaspoon kosher salt in a bowl.

Add 1 pound of lean ground turkey and 1/2 cup of panko breadcrumbs to the mixture and mix together gently using hands or a wooden spoon to retain texture.

Refrigerate the mixture for about 30 minutes.

Preheat the grill to 400ยฐF.

Take about 2 and 1/2 oz of the mixture (a generous 1/4 cup) and form it into a football shape.

Place the formed mixture onto a skewer and press out until elongated and even on all sides.

Place the koftas on the preheated grill and cook for about 18 minutes, turning often.
